This keto chicken bacon soup recipe is easy to make and can be enjoyed in many different diet approaches. It is also gluten-free, dairy-free, soy-free, paleo, AIP, and low oxalate.

Below I also provide options for ingredient substitutions, as well as directions on making it low FODMAP, lower calorie and candida diet friendly/sugar-free.

Recipe substitutions or variations

Substitutions:

Ground pork substitutions: instead of using ground pork, you can also use ground turkey, ground chicken or ground beef.

Chicken breast substitutions: instead of using chicken breast, you could also use chicken thigh.

Bacon substitutions: instead of using pork bacon, you can also use chicken or turkey bacon.

Chicken bone broth substitutions: If you don’t have bone broth, you can also use regular chicken stock or chicken bouillon cubes. Check out my bone broth recipe if you want to make your own.

Coconut oil substitutions: Instead of coconut oil, you can also use bacon grease, pork lard, olive oil or any other cooking fat of choice.

Garlic substitutions: instead of using fresh garlic, you could also use ½ to 1 teaspoon of dried garlic powder.

Onion substitutions: instead of using fresh onion, you could also use 1 teaspoon of dried onion powder.

Fresh thyme substitutions: instead of using fresh thyme, you can also use 1 teaspoon  dried thyme leaves.

Dried chive substitutions: instead of using dried chives, swap it out for 2 tablespoons fresh diced chives.

Kohlrabi linguine substitutions: instead of using Mann’s kohlrabi linguine, you can also use whole fresh kohlrabi – just peel it and dice it before adding it to your soup. Or alternatively, if you have your own spiralizer you can make your own kohlrabi noodles.

Variations:

Make this recipe lower calorie/fat: Swap out the pork bacon for either chicken or turkey bacon, or omit the bacon altogether. Instead of using 2 tablespoons of coconut oil to fry your onions and garlic, lower this amount to 1 tablespoon or less.

Make this recipe low FODMAP:  Omit the garlic and onion.

Make this recipe candida diet friendly/sugar-free: Make sure you buy sugar-free bacon. Otherwise, this recipe is totally sugar-free and candida diet friendly.

Recipe FAQs:

Can I use a slow cooker instead of a pot?

For this chicken bacon soup recipe, you can also use a slow cooker or crockpot. Simply add all the ingredients into the slow cooker for either four hours on high or eight hours on low. If you want the bacon to remain crispy, fry or bake it separately and add at the end.

Can I fry the bacon instead of baking it?

Feel free to fry your bacon instead of baking it if you prefer it that way. It will turn out great either way.

Ingredients
  

  • 1 lb chicken breast (boneless skinless)
  • 300 g bacon (about 10 slices)
  • 285 g kohlrabi linguine (1 bag of Mann’s or roughly 2 cups of peeled and diced kohlrabi)
  • 6 cups chicken bone broth
  • 2 tbsp butter flavoured coconut oil (or bacon grease)
  • 1 small sweet onion
  • 1 bunch green onions
  • 1 tbsp fresh thyme
  • 2 cloves garlic
  • 1 tbsp dried or fresh chives
  • 1/2 tsp salt

Instructions
 

  • Preheat your oven to 350 F.
  • Bake the bacon in the oven for 30 – 35 minutes or until desired crispiness.

  • While your bacon is cooking, chop up the onion, green onions, thyme, and garlic.

  • Heat a large pot on low to medium heat and add 2 tablespoons of butter flavoured coconut oil.

  • Fry your onions and garlic, slice up the chicken breast into small pieces.

  • Add chicken to the pot and continue frying, stirring often, until the chicken breast starts to brown.

  • Add the chicken broth, kohlrabi linguine (or roughly 2 cups of peeled and diced kohlrabi),

  • Bring everything to a boil and simmer until the kohlarbi noodles are cooked through (roughly 20-25 minutes or so).

  • At this point your bacon should be ready. Place your bacon on paper towel to get the extra grease off, put on a cutting board and dice up into small pieces.
