These oven baked greek meatballs are fresh, colourful and easy to make. They are gluten and dairy free, sugar free, low oxalate and candida friendly.

  • Parchment paper

  • Measuring cups and spoons

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 tbsp dried parsley
  • 1 tbsp dry chives
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/2 tsp garlic powder
  • 1/2 cup gluten-free panko breadcrumbs
  • 1/4 cup gluten-free flour
  • 1 container unsweetened and unflavored coconut yogurt
  • 1 bunch fresh mint

Instructions
 

  • Preheat your oven to 350°F
  • Empty the ground pork and beef into a large mixing bowl.
  • Measure out all of the herbs and seasonings and add them to the bowl.
  • Once all the seasonings are thoroughly mixed in, add the gluten-free Panko breadcrumbs and gluten-free flour and mix well.
  • Form into roughly 29 meatballs and place on baking sheets lined with parchment paper.
  • Bake your meatballs for 20 to 25 minutes or until cooked through and starting to brown nicely.
  • Served with coconut yogurt topped with freshly diced mint.
