Oven Baked Greek Meatballs (Paleo Option)
These oven baked greek meatballs are fresh, colourful and easy to make. They are gluten and dairy free, sugar free, low oxalate and candida friendly.
- 1 lb ground beef
- 1 lb ground pork
- 1 tbsp dried parsley
- 1 tbsp dry chives
- 1 tsp dried oregano
- 1 tsp cumin
- 1 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 tsp garlic powder
- 1/2 cup gluten-free panko breadcrumbs
- 1/4 cup gluten-free flour
- 1 container unsweetened and unflavored coconut yogurt
- 1 bunch fresh mint
Preheat your oven to 350°F
Empty the ground pork and beef into a large mixing bowl.
Measure out all of the herbs and seasonings and add them to the bowl.
Once all the seasonings are thoroughly mixed in, add the gluten-free Panko breadcrumbs and gluten-free flour and mix well.
Form into roughly 29 meatballs and place on baking sheets lined with parchment paper.
Bake your meatballs for 20 to 25 minutes or until cooked through and starting to brown nicely.
Served with coconut yogurt topped with freshly diced mint.
