Equipment

Ingredients
  

  • 2 cups cassava flour
  • 2 cups tigernut flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp poppy seeds
  • 2 Eggs
  • 1/3 cup Lemon juice Juice of 4 lemons (roughly)
  • 1.5 cups dairy free milk
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil
  • 1 tbsp vanilla extract

Instructions
 

  • Preheat oven to 350F
  • Mix all dry ingredients together in stand mixer
  • Add all wet ingredients and mix thoroughly
  • line muffin tins with parchment cups and fill evenly
  • Bake for 25-30 minutes until toothpick test comes out clean
